It's Raining Men! And Pie!

So Friendsgiving #1 went well! Not that that should be a surprise... anytime there's food and people involved, it's usually a pretty solid bet.

I made another lemon chiffon pie, some mini pumpkin pies and a Scandinavian Tiger Cake (basically a marble cake).

That's seriously all of the dessert we ate. :/ But that's alright, breakfast pie is the best kind of pie there is.

Since I was on a baking roll, I made gingerbread men this week too!

I like my little guys soft and chewy and topped with m&ms!

'Tis the season!

Gingerbread Cookies

You Will Need:
3 cups all purpose flour
1 1/2 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
1 Tbsp ground ginger
1 3/4 tsp ground cinnamon
1/4 tsp ground cloves
6 Tbsp unsalted butter, softened
3/4 cup dark brown sugar
1 large egg
1/2 cup molasses
2 tsp vanilla extract

In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.

In a stand mixer, beat butter, brown sugar, and egg on medium speed until well blended. Add molasses and vanilla extract and continue to mix.

Gradually stir in dry ingredients until blended and smooth.

Divide dough in half and wrap each half in plastic and let stand at room temperature for at least 2 hours or up to 8 hours. 

Preheat oven to 375. Roll out dough to about 1/4" thickness and cut into desired shape. Use flour as needed to prevent the dough from sticking to the surface.

Bake cookies for 7-10 minutes (the shorter time the time, the softer the cookie).

I'll be attempting a Peruvian chicken this week whilst preparing for Friendsgiving #2 this weekend! Yippee!
