Tomato Torture :(

This is what giving up on an omelette looks like...

I went on a recon mission the other day to our old backyard (I know it sounds shady, but don't worry, it's currently vacant and waiting for our new tenants) and harvested some produce from my teeny little plot of suburban farmland. 

Get it girls!

Hence the "omelette" loaded with so many vegetables it ended up looking more like a vegetable cereal than a beautiful packet of egg with goodies tucked in. :(

WANTED: More tomato recipes that make me forget I'm eating tomatoes.

Actually, I happened upon SmittenKitchen's recipe for one-pan farro with tomatoes that I'm totes going to try this week. Holla at some whole grains!
