One-Pan Farro with Tomatoes

As promised, I gave SmittenKitchen's One-Pan Farro with Tomatoes a try and not surprisingly, it was awesome!

It's beyond easy! You just put in water, farro and dump in some odds and ends (mostly things you probably have on hand) into a pot, wait for 30 minutes, and BOOM. It's like a healthy risotto.

You Will Need:
2 cups of water
1 cup farro
1/2 large onion
2 cloves garlic
1 pint cherry tomatoes
1 1/4 teaspoons salt
1 Tablespoon olive oil
spinach (optional)
grated parmesan (optional, for serving)

Directions:

Put the water and farro in a medium saucepan and let it soak for about 10 minutes while you prepare the other ingredients (just add them to the pot as you go). Cut the onion in half again and slice thinly, slice or mince the garlic, cut the cherry tomatoes in half or quarters. Dump in the salt and olive oil and bring it all to a boil. Lower to a simmer and let cook for 30 minutes (no lid required!). 


Once it's done cooking, the tomatoes should be super tender and the farro should have soaked up nearly all of the liquid (the farro should be tender, but it will have a bit of a chew to it). If you're using spinach, add it to the pot and let the heat from the farro wilt it. 

Stir in some parmesan if you want to. (Always.)

Yummy!

You can easily use it as a side, or top it with a fried (or poached) egg as a meal.
