A Road Trip :)

I've rolled on in to Wake Forest this weekend for some quality time with my Shepopotamus (most of which will probably be spent doing what we do best - hanging out). 

I didn't do much in terms of planning for the trip, so upon googling exactly how far Wake Forest was from me, I decided a pit stop in Fredericksburg would be necessary.

Killing two birds with one stone, I decided to drop off the Africa painting to a friend.

One of those moments where you really hope you don't get pulled over and have to explain the giant slabs of people you have in your trunk. :|

I delivered all of the pieces successfully though and we pieced them all together for the first time in a loooong time. I don't envy whoever it is that's got to hang this stuff up on a wall.

And then it was back to this... BLARG.

Some several hundred miles later, I made it!

Brought this girl a lovely wreath her momma made (we later hung it on the door).

And as if the sight of this girl wasn't enough to make my heart stop, she surprised me by making calzones!! FROM SCRATCH!

For a girl that didn't know the difference between gorgonzola and garbanzo months ago, this is some seriously delicious progress! Never been prouder!

Like a genius, she topped these bad boys off with some melted butter and garlic salt.

And she even made salad! Cutting tomatoes like a pro!

Sheppy's Super Calzone Recipe

You Will Need:
 1 1/4 cups water
1 teaspoon salt
3 cups bread flour
1 teaspoon dry milk powder
1 1/2 Tablespoons active dry yeast
3/4 cup pizza sauce
4 ounces pepperoni, chopped
1 1/4 cups shredded mozzarella cheese
2 Tablespoons butter, melted
garlic salt

Directions:
Place water, salt, bread flour, dry milk, sugar, and yeast in a standing mixer with a dough hook attachment. Mix on low speed until combined and then change to medium speed, mixing until dough forms in to a ball and the sides of the mixing bowl are clean.

Cut dough into five pieces. Roll each piece out to form a small disk. Prepare a lightly greased cookie sheet. 

In a small bowl, mix together chopped pepperoni and mozzarella. Spoon pizza sauce in a stripe down the center of the dough lengthwise; add pepperoni and cheese filling to one half of the dough disk.

Fold the other half of the disk over and pinch to seal. Brush top of calzone with melted butter and top with garlic salt. Bake in a 350 degree oven for 35-45 minutes.

There's nothing better than your classic pepperoni and cheese, but you can obviously change up the toppings if you want to. And we doused our calzones with extra sauce when it was time to consume them because that's always the right thing to do. It's all about the sauce!
