Results and Tacos

In conclusion, it wasn't terrible. The flavor was there. It was chewy. It didn't puff up as much as I wanted it to, but that's alright. Things could have been a lot worse.

(The directions said to leave it in a warm place to proof before baking, so I put some plastic wrap over it and set it out in the sun for a while - it helped poof things up a bit.)

The top was almost uncooked while the bottom got nice and crusty. :/

Meh. It was a solid attempt.

I also made breakfast for myself (second day in a row - wahoo!!) while I was waiting for this thing to proof/bake this morning...

I'm obsessed with these breakfast tacos!
They're so easy to make and take no time at all!

Jojilicious' Ten Minute Breakfast Tacos
(This includes the time it takes to inhale them if you're in a hurry. Seriously. I timed it.)

Ingredients

2 corn tortillas
olive oil
1 small red potato, diced finely
1/4 onion, diced finely
salt & pepper
2 eggs, beaten
cheese (I used shredded mozz, use whatever)
salsa

Directions

In a small pan, heat corn tortillas over medium heat, approx 2 minutes on each side.*

Remove from heat and in same pan, add approx 2 tbsp olive oil, potato, and onion. Cook until potatoes are golden brown (doesn't take very long if your potatoes are cut into teeny tiny cubes).

Add eggs and stir constantly until eggs are cooked, but still soft (try not to overcook them!). Remove from heat and divide filling into tortillas.

Top with cheese and salsa and chow down!

*This is a crucial step. I skipped it the first time I made these and the salsa/eggs made the tortillas go from structurally sound to sog-city almost immediately after I filled them. Crisping them up a bit helps.
