Gnocchi Night!
Work's been keeping me pretty busy lately, but luckily it's starting to slow down a bit and I can catch up with some friends again!
Last week was pretty stressful, so I'm glad I got a chance to take some breathers - a surprise visit from Momma Shep, Kristy, and those precious boys at work (!) and finally getting to hang out with Lauren for the first time since… her birthday (?) yikes. :/
We had a little pasta night and unfortunately Lindsey couldn't make it, but now that we have the recipe down, I'm definitely looking forward to doing this again soon!
For all you devoted readers - remember the Sweet Potato Gnocchi with Brown Butter Sage recipe? Oh yeah, we pulled out the big guns. This is actually a super easy recipe and great for a large group of people.
I even gave up some control in the kitchen (!) and it was a lot of fun making the gnocchi together.

The first batch came out a little mushy - I forgot to let them cool before cooking them in the pan (whoops!) but they were still edible. Joey made a yummy salad and did a superb job dishing everything out.
After a disappointing round one of gnocchi, Socks decided that he could do a better job of cooking up round two of the gnocchi.
He was right. Look at those gorgeous bits. Not stuck together at all. :|
What a punk.
But seriously, if you guys are looking for a super delicious and simple recipe that's fun to make, definitely try this one out! You don't need that many ingredients - all I needed to buy were the sweet potatoes, some ricotta, and sage.
