Sweet Potato Gnocchi. DROOL.
I've been wanting to try this recipe for a long time and finally had the courage to make it last weekend, it was a huge hit! It was SO easy and fool-proof, I made it again for dinner tonight and had plenty to freeze for another day.
Sweet Potato Gnocchi with Brown Butter and Sage
Ingredients:
YUM! And it's perfect for this cold and dreary weather - until it starts looking like spring, I'm happy to spend what's left of this terrible weather on the couch with a big bowl of this stuff!
Sweet Potato Gnocchi with Brown Butter and Sage
Ingredients:
2 pounds sweet potatoes (rinsed and pierced with a fork)
12 ounces ricotta, drained in a sieve for 2 hours
1 cup of finely grated parmesan (1/4 cup saved for garnish)
2 tablespoons packed brown sugar
2 teaspoons salt + 2 tablespoons
1/2 teaspoon ground nutmeg
2 1/2 cups flour + more for rolling
1 stick of butter
4 tablespoons chopped fresh sage
Directions:
1. Place sweet potatoes on a plate and microwave on high until tender, about 5 minutes on each side. Cut in half and allow to cool. Scrape flesh into a medium bowl and mash with a fork.
2. Add ricotta, parmesan, brown sugar, salt, and nutmeg, mash to blend.
3. Mix in flour, about 1/2 cup at a time, until a soft dough forms.
4. On a floured surface, roll sections of the dough into ropes about 1-inch in diameter, cut into sections approximately 1-inch sections. Roll each piece over the tines of a fork to indent and transfer to a baking sheet.
5. Bring a large pot of water to a boil, add 2 tablespoons of salt and return to a boil. Boil gnocchi in batches until tender and the gnocchi float to the surface. Transfer gnocchi to a clean plate and allow to cool. (If you want to freeze any, you can freeze them at this point.)
6. Melt butter in a saucepan over medium-high heat and cook until butter solids begin to brown, approximately 5 minutes. Add chopped sage (mixture will bubble up) and add cooled gnocchi and cook until warmed through - approximately 2-3 minutes.
7. Divide gnocchi and sauce into bowls and top with a little extra parmesan!
