Lightfoot

A surprise-ish celebration brought the ol' crew to Lightfoot in Leesburg. It was super yummy and I love the building it's in - what used to be People's National Bank (meaning there are super cool vault doors).

The Sicilian Chicken is a must try! I'm a sucker for polenta and their polenta is amazing!

And Lauren made some phenom snickerdoodle blondies for dessert! 

Definitely give this place a try! Their gin & tonics are phenom too (they can get you in some trouble because they taste like limeade). Unfortunately, the snickerdoodle blondies so you'll have to make them yourself (or call Lauren)!

You Will Need:

2 2/3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 cups packed brown sugar
1 cup butter, room temperature
2 eggs, room temperature
1 Tablespoon vanilla
2 Tablespoons white sugar
2 teaspoons ground cinnamon

Preheat oven to 350. Lightly grease a 9x13 inch baking pan.

In a medium bowl, whisk together flour, baking powder and salt.

In a large mixing bowl (or in a standing mixer) beat together butter, brown sugar, eggs, and vanilla until smooth. Add the flour mixture and beat until well blended.

Spread batter evenly in to prepared pan.

In a small bowl, combine white sugar and cinnamon. Sprinkle mixture evenly over the batter.

Bake 25-30 minutes or until surface springs back when gently pressed. Let cool slightly and cut into squares while still warm.
