French Yogurt Cake
I LOVE Bon Appetit Magazine! It's probably the only subscription I'll renew year after year because every issue has at least a handful of recipes I will actually try!
After a long day at work, I went on a 50ish minute jog/walk, and then the only thing I wanted to do was bake. This month's issue has a huge feature on Paris and I think I'm going to cook my way through the entire magazine! It all looks SO good! Just call me Julie Powell.
Which brings me to their recipe for French Yogurt Cake. I actually hate baking (measuring is ridiculous) but what I do like about it is the downtime you get, especially with quick breads, which ironically enough, typically take about an hour in the oven. Not quick at all. Especially when smell of lemony goodness starts filling the room. No, not quick at all.
What caught my eye with this recipe is that these gorgeous lemon quick breads are made with greek yogurt! No butter! WHAT.
I knew this one was going to be a keeper, so I went ahead and doubled the recipe (go big or go home) and made one loaf with some fresh blueberries in it.
With Mother's Day coming around the bend, this would be a great addition to a lovely brunch or afternoon tea!

To make a loaf with blueberries, I just tossed the fresh blueberries in a little bit of flour then added it to the batter (it was about 1/2 cup of blueberries for half of a batch of batter).
